Ingredients

  • 2 tablespoons orange juice
    1 tablespoon lemon juice
    1 tablespoon honey
    1 tablespoon reduced-fat sour cream
    1/4 teaspoon pumpkin-pie spice
    1/4 teaspoon salt
    Pinch of ground black pepper
    2 cups matchstick-cut carrots
    1 cup matchstick-cut apples
    1 cup dried cherries

Directions

1. In a medium bowl, whisk together orange juice, lemon juice, honey, sour cream, pumpkin-pie spice, salt, and pepper.
2. Add carrots, apples, and cherries, and toss to mix.


TIP: To switch up the flavor, replace the pumpkin-pie spice with cinnamon or apple pie spice. Or, for something more exotic, use 1/2 teaspoon curry powder.
