Ingredients

  • 1 Panera Bread French Baguette, sliced in 1/2 in pieces

  • 3 Vine ripened tomatoes, seeded & diced

  • 1 cup of feshly chopped basil (in strips) approximately 20 leaves

  • 2/3 cup olive oil

  • 3 cloves garlic, minced

  • 1/4 ts salt

  • 1/4 ts fresh ground pepper

  • Garnishment:

  • For added eye appeal add 1/2 or whole basil leaf to top of each baguette piece & mixture

Directions

1. Preheat toaster or conventional oven to 400 degrees.

2. Start by slicing your tomatoes in half. Remove seeds & dice.  Place in medium mixing bowl. Layer your basil leafs & roll up.  Start at the end and start slicing the rolled leaves so the basil comes out in strips then add to tomatoes. Mince garlic cloves and add to tomatoes & basil.  Add 3/4 of the olive oil in and salt and pepper & use spoon to toss ingredients together.

3. Slice your french baguette in 1/2 in pieces and brush lightly with remaining olive oil.  Note: You can ask your local Panera Bread cashier to run your baguette through the thick slicer as an alternative.  Place in toaster oven or conventional oven directly on rack and toast for approximately 1&1/2-2 minutes until lightly toasted.  

4. Top your baguette pieces with bruschetta mixture & basil leaf & serve immediately.
