Ingredients

  • 1 1/2 cups prepared hummus

  • 4 large flour tortillas (at least 12-inch diameter)

  • 1 cup shredded reduced-fat pepper Monterey Jack cheese

  • 1 cup chopped red bell pepper

  • 1 cup shredded carrots

  • 3 baby cucumbers, thinly sliced

  • 2 scallions (white and green parts), chopped

  • 2 tomatoes, thinly sliced

  • 2 cups shredded romaine lettuce

Directions

1. For each wrap, spread hummus over top 2/3 of a tortilla. Layer on cheese, peppers, carrots, cucumbers, scallions, tomatoes, and lettuce in a row in the center.

2. Compress filling slightly, and then fold the bottom of the tortilla over the filling. Fold in about 1 inch of the sides and roll firmly away from you, compressing the filling as you roll.

3. Cut each wrap in half on a diagonal.


TIP: If you can’t find baby cucumbers, use 1/3 of a peeled English cucumber (the long, skinny variety shrink-wrapped in plastic at the supermarket).
